Last night I used Thomas Keller's "My Favorite Simple Roast Chicken" recipe. I was not disappointed. The simplest preparation methods are definitely the best. (beet powder notwithstanding).
Which brings me to my fondest wish: dinner at The French Laundry. This, I would imagine, is almost every foodie's dream. I often go on the website just to read the menu and daydream about what it would be like to dine there. Of course I wouldn't turn up my nose if I were invited to Bouchon. There is something comforting about simple French bistro fare. The clean, light flavors are incredibly satisfying and ultimately rewarding. If I were a chef this would be my cuisine of choice.
Ahhhh well......in my next life.
