little j and I are heading to Oregon on Tuesday morning, so I have been trying to use up everything in the fridge. This is a challenge since little j's constant request is noodles. Tonight I looked around the kitchen and knew that I needed to use the half dozen roma tomatoes I picked from the garden, as well as the onion, zucchini and eggplant I got from the farmers market last week. So, I chopped up half the onion and sauteed in a bit of EVOO until translucent. Chopped the tomatoes and added them to the onion along with some fresh oregano. After the tomato cooked down I added the diced eggplant and zucchini and cooked for about 5 minutes at medium, then lowered the heat and covered the pan for about 15 minutes. I seasoned with salt and pepper and served it over rice with grated Parmesan. There's enough for tomorrow night's dinner (noodles). Yum!
