It is now 2 p.m. I've taken Jake to the vet and then dropped him at the doggy spa for a day of beauty. I've canned just 3 quarts of apple sauce. I have another 4 quarts waiting on the stove to be put into jars and canned.
In the meantime, I've decided to also make apple butter. I found a good recipe at Simply Recipes, a site I highly endorse. Here's where the major issue came in: you quarter and cook the apples (unpeeled, uncored), cook them for 20 minutes, then push them through a strainer or food mill. Sounds easy enough. But I know how difficult that can be. That's when I remembered that I have a handy-dandy attachment to my Kitchenaid mixer (thank you Sherri!). Of course I couldn't find the directions for how to attach everything and it took me a good hour to find the instructions between searching for an on-line manual and combing through the house. I finally found it in the box we keep the bills in. Go figure.
I've strained the apples, then decided that I should make another 4 pounds. So, that's where things are. I still have about 20 pounds of apples waiting. I'm thinking that there are a couple pies, turnovers, and a tarte tatin in my future!

I'll be over in just a second to help out. I should be reading about a 1000 pages of neuro stuff by the end of the week. The Glasgow Coma Scale can wait!
Wouldn't it be fun to have a "canning club?" Once a month get together with friends and make something to can then have enough for everyone to take a couple jars home?
