Tonight was my second meal with quinoa -- and again it was a big hit. Actually, the whole dinner was great. The menu:

First of all, the salmon was amazing -- fresh from Alaska with hints of rosemary, lemon and onion. The quinoa was a revelation. It made a nice side dish, but it could definitely be served as an appetizer. Big J and I both felt that the meal was restaurant worthy and it only took about 45 minutes to prepare.
Big J took little j out for frozen yogurt after dinner and is bringing me back a small lemon -- a nice way to cap off the meal.
